Equipment

  • 1 Saucepan
  • 1 Set of scales
  • 1 long handled stirring spoon
  • 1 Ladle
  • jars for jam

Ingredients

  • 4 kg figs
  • 2 kg sugar
  • 1 1/2 lemon, juiced
  • 2 sticks cinnamon
  • 1 tsp grated orange rind

Instructions

  • Mix figs and sugar in a bowl and leave overnight
  • Next day put all the ingredients in a saucepan
  • Break up the figs gently
  • Bring mixture to the boil
  • Then simmer till setting point
  • Pour into jars
