Jam drop biscuits from the Coronation Cookbook

Equipment

  • 2 bowls large enough to hold 3 cups of flour
  • 1 measuring cup
  • 1 Tablespoon
  • 1 electric beater Or you can go old school and use a wooden spoon
  • 1 oven at 180C
  • 1 Baking tray
  • baking paper

Ingredients

  • 3 cups flour
  • 6 tbsp butter
  • 2 eggs
  • 1 cup sugar And a little more sugar to roll the biscuits in
  • 2 tsp baking powder
  • raspberry or other jam

Instructions

  • Beat butter and sugar to a cream
  • Add eggs and beat in well
  • Then add flour and baking powder and mix well. It should now be a soft dough
  • Line the baking tray with baking paper
  • Roll dough into small balls. Put them on the baking paper and press lightly on the top to make a depression
  • Add jam by the teaspoon into the depression in the biscuits
  • Bake for 10 - 15 minutes
